Cooking Every Meal for Two Weeks

Everyone is dealing with this differently. I am dealing with all the anxiety and grief through food. I have had a goal to “cook every meal I eat for two weeks” for a while, but never did it. As I started working from home roughly ten days ago, I finally started!

Dish 1 — A modern poha? Brown rice poha, spinach (I’ve frozen some packs!), sweet potato, feta cheese on top! I have friends who think calling this poha is a sham, but well, it tasted good.

Dish 2 — Bharwaan Baingan Spiced brinjal with cous cous and baked chicken. What went in the masala — coriander powder, bhuna jeera, amchur, salt, pepper. A little bit of red wine vinegar while cooking the onions. Finished with lime on top!

Dish 3 — Roasted okra with orange and honey glaze I made this on googling a recipe that would use okra and oranges (two ingredients in the fridge that were about to die). And sent to my mother saying, I made “Roasted okra with a glaze of orange and honey with cinnamon infused brown and red rice.” :P

Dish 4 — Salad! Onions and canned kidney beans sautéed in olive oil, chilli powder and a dash of red wine vinegar. Boiled eggs, cucumbers, carrots, feta cheese, green bean sprouts, oranges, avocado. Dressing — Olive oil, red wine vinegar, salt, pepper, honey.

Dish 5 — Sambhar with purple carrots and broccoli Broccoli in sambhar is amazeeeeee.

Dish 6 — Suji ke cheele! Aka semolina pancakes.

Dish 7 — Pan seared fish Fish pan seared in butter, garlic and herbs. Onions and beetroot sautéed in coconut oil. Everything finished with lime on top.

Dish 8 — Broccoli zucchini soup Whenever things are about to go bad, I make soups. Today’s lunch was broccoli, zucchini and coconut milk soup! Took some of the broccoli stems, chopped the inner bits and sautéed in oil, to make them slightly soft. Added them on top!

Dish 9 — Stuffed baingan with rice Took a baingan, scooped it out, cooked the scooped out stuff with onions, tomatoes, carrots, chicken and spices. Filled it back in. Wrapped in foil and baked the brinjal.

Dish 10 — Egg spinach curry

Dish 11 — Orange rosemary chicken Orange rosemary chicken and amrud wali kadhi (gram flour and yogurt curry with guavas).

Dish 12 — Zucchini noodles Zucchini noodles (spiralised veggies yay!), asparagus, long beans and shrimp with spinach and walnut pesto.

Dish 13 — Spinach omelette Spinach omelette with spiced beans, ricotta cheese and cherry tomatoes.

Dish 14 — Beetroot risotto Beetroot risotto (minus the risotto rice) cooked in vegetable stock and white wine, alongside halloumi, water spinach (I grew it!), spring onions and pickled cabbage.
